These cookies , i think, are very good. I made these as a homecoming dessert for my mum. They all liked them and were greatly enjoyed.
Ingredients:

-1 and 1/2 cup of oatmeal
-1/2 tsp. baking soda
-3/4 cup of butter
-1 cup of brown sugar
-1/2 cup of white sugar
- 1 egg
-1 egg yolk
-2 tsps. vanilla
-3/4 cup of chocolate chips
-caramels (however many you want)
-sea salt
Directions:

1. First preheat oven to 325 degrees F. In a separate bowl mix together baking soda (1/2 tsp.) and flour (2 cups + 2 tbsp)

 2. Next cream together butter (3/4 cup) and sugars (brown = 1 cup & white = 1/2).

3. Add the one egg, egg yolk, and vanilla (2 tsp.). Then mix together well.

4. Gradually stir in oatmeal ( 1 & and a 1/2 cup) and flour (1 cup). Mix again thoroughly.

 5. Next fold in caramels and chocolate chips (3/4 cup). And stir in gently.

6. Then put in the oven for around ten minutes.

7. Take them out of the oven, let them sit, and enjoy!!!

Yes, i would recommend shaving the caramel into small pieces rather then big chunks :D
